Okay, that’s not true. But at times it felt that way.

Our missions team here has been praying, preparing, planning, spreading the word and reaching out on Samal – all in preparation for these four days of meetings the first week of November.

It was a success to say the least! Many lives were impacted, healed, restored, empowered, equipped, refreshed, revived, renewed and blessed!

Thank you so much to those who prayed for us and for this event!

Coordinating and administrating while fighting morning sickness was a challenge for me (Jenny) but there was so much grace! I felt a buffer of prayer around me, enabling me to move forward in all that needed to be done during Awake Samal! Thank you!

We are joyful and thankful for our soon coming baby!

This morning my cupboards whispered, “Rolled oats…” My freezer was calling, “The frost is beginning to bite the bananas in here…” All while the fridge (or maybe it was my sweet tooth…) reminded me ever so gently, “The succulent mini chocolate chips for which you have not found a purpose…”

Thank the Lord; the idea blossomed into banana oatmeal chocolate chip pancakes made with yogurt and whole wheat! YUMMY!

Toppings options included of course maple syrup, chunky peanut butter, strawberry or guava jelly, and powdered sugar. Below is the recipe. Enjoy!

Ingredients:
1/2 cup plain yogurt
1/4 cup milk (more if the batter seems thick)
1 egg
1 tbsp vegetable oil
1 tbsp honey
1 tbsp brown sugar
3/4 cup white whole wheat flour
1/2 cup old fashioned oats
pinch salt
1/4 tsp baking soda
1 tsp baking powder
pinch cinnamon

Whisk together the yogurt, milk, oil, honey, and egg in a large bowl. Stir the remaining ingredients together in a medium bowl, then add to the wet ingredients and mix gently. If the batter seems especially thick, add a tablespoon or two of milk. Heat a skillet over medium low heat and spray with nonstick spray. Ladle out 1/4 to 1/3 cup of batter for each pancake and cook until golden brown on the bottom. Flip and cook an additional 2-4 minutes, or until golden both sides.

At 5 weeks she was in the top 75% for her height and head circumfrence, and 50% for weight. Since birth, she has gained 3 inches and 3 pounds (as of two weeks ago)!

Her favorite position these days is being held high over a shoulder, so her curious eyes and ever-learning brain can take everything in. She must think she’ll miss something during the day, because naps have not been her friend. However, she has no problem sleeping at night (between meals), and transitioned to her own room very easily.

She can now hold her head up for several seconds and smiles at both Mommy and Daddy. We are so proud of her and thank God for her, and that she’s so healthy and strong.
